Balsamic Glazed Ribs

Serves 4

Ingredients:

  • 2 tablespoons chopped garlic

  • ¾ cup balsamic vinegar

  • Juice of 2 small oranges

  • 2 tablespoons extra-virgin olive oil

  • 2 tablespoons honey

  • 4 lbs St. Louis ribs

Instructions:

  1. Preheat oven to 400 degrees F.  Line a baking pan with aluminum foil.

  2. Puree garlic, balsamic, orange juice, and oil in a blender, then transfer to a bowl and whisk in honey.   Place the mixture into a small pot, and bring to a boil.  Reduce heat and cook for about 10 minutes.  Reserve half of sauce and coat ribs with remainder. 

  3. Arrange ribs, meaty sides down, in baking pan and bake, turning and basting once with some of reserved sauce halfway through baking, until cooked through, about 40 minutes.

  4. Turn on grill to medium high setting.  Lubricate grates with oil. Brush ribs, meaty sides up, with remaining sauce.  Grill on both sides until edges are lightly charred, 4-8 minutes.

  5. Transfer to a platter, and serve while still warm.
