Sesame Noodles with Peanut Sauce

Serves 6

Ingredients:

·      1/4 cup tamari sauce

·      2 teaspoon brown sugar

·      3 teaspoon rice vinegar

·      1 teaspoon minced ginger

·      1/2 cup peanut butter

·      1 tablespoon sugar

·      2 garlic cloves, minced

·      1 teaspoon sesame oil

·      1/4 cup lime juice

·      1/4 teaspoon Tabasco

·      1/2 pound whole wheat pasta, cooked according to instructions

·      2 small carrots, julienned, blanched

·      2 cups snap peas, halved diagonally, blanched

·      1 red pepper, julienned

·      1/2 cup cilantro leaves, chopped

·      2 scallions, sliced diagnolly

·      1 tablespoon toasted sesame seeds

Instructions:

1.     Combine the soy sauce, brown sugar, granulated sugar, rice vinegar, ginger, garlic, peanut butter, water, sesame oil, lime juice, and tabasco in a processor and blend until smooth. 

2.     Cook the pasta in a large pot of salted boiling water until al dente.  Drain and transfer to a large bowl.

3.     Add the sauce to the pasta with the carrots, snow peas, peppers, scallions and cilantro and toss well.  Serve. 

Peanut Sauce

·      1/4 cup soy sauce

·      2 teaspoon brown sugar

·      1 tablespoon granulated sugar

·      3 teaspoon rice vinegar

·      1 teaspoon minced ginger

·      2 garlic cloves, minced

·      1/2 cup peanut butter

·      ½ cup water

·      1 teaspoon sesame oil

·      1/4 cup lime juice

·      1/4 teaspoon tabasco

Instructions:

1.     Combine the soy sauce, brown sugar, granulated sugar, rice vinegar, ginger, garlic, peanut butter, sesame oil, lime juice, and tabasco in a processor and blend until smooth.  Refrigerate for up to 4 days.
